Kopi-Kat Hup Tou Sou Cookies

Last Thursday Mamarazzi saw Sonia's Nasi Lemak Blog in which she baked "Hup Tou Sou Cookies" . It's one of Mamarazzi favourite cookies.

All along she thought it's hard to make but from Sonia's recipe, it seems super easy.

Off she went and got the ingredients and started baking. It's easy. Just dump everything into the bowl and mixed it.






She remembers that Sonia mentioned about putting walnut. First attempt, she blended the walnut but it was too fine. She decided to pound the walnut instead.

End result...argh....all the cookies "huat ah" and stuck together.

Taste wise, it's still yummy.

 Second batch looks much presentable. But Mamarazzi was still not satisfied as Papa didn't like it. Said got "chemical" taste. Could be the oil that Mamarazzi use not peanut oil or maybe the taste of the alkaline water or the baking powder.



Third batch Mamarazzi added Cocoa Powder and Cinnamon powder.

Gave a few "white mice" to try and they said tasted good . Of the two they preferred the original taste instead of Cocoa taste and the Cocoa tasted "common"....like Chocolate biscuits.

And the baking marathon went on...baked some pineapples tarts too.

Gosh this month's electricity bill gonna shoot up high lor...But then maybe can save some money la as Kangkung price had reduced .

Our vegetable garden seems to be growing fine. Got some kangkung, sweet potatoes leaves, ginger, Pegaga and even the pumpkin plant is flowering.

Want the recipe? Here it is :-

Ingredients :

250 g plain flour
50g of pounded walnut
1 tsp of Cocoa powder(for the cocoa biscuits)
1 tsp of Cinnamon powder(for the cocoa biscuits)
1/2tsp baking powder
80g sugar(original recipe calls for 125g sugar)
1/2 tsp alkaline water(Air Abu/ 碱水)
1/2 tsp fine salt(Mamarazzi omitted this in the second batch of biscuits as she finds that the taste from the butter if salty enough)
20g salted butter
150g cooking oil or peanut oil
1 egg yolk(for glazing)

Method : 

- shift and mix all the dry ingredient together. Rubber the butter to the flour. Then slowly add the oil till it forms a soft dough.

- make the dough into 50sen coin size balls  and and use a bottle cap to press the center of each cookies

- Glaze the cookies with the egg yolk and bake in the oven 170C for about 25 minutes.

  3. Hey I just watched TV documentary that people in China often ate walnuts to have supple and clear skin without using moisturizer at all. They showed a 70 something year old doctor whose face and legs are as good as a baby's.

  6. You know, when I see "hap tou soh", I always think of oink oink lard.. They always say, if got "chue yau" then the cookies will taste better.. But I think if we use good quality ingredients, plus good *ahem* baking skills, I think the cookies will still taste as nice..

    And looking at the photos, I already know the cookies sure taste yummylicious and I really salute mamarrazi for "kam yau sum kei" to bake so many batches.. Degil.. Nak jugak dapat (the best result) sampai dapat yer?

  7. Baking mood! I see FB also a lot of people baking.. that motivates me as well.. but havent start yet.. kids are pestering though.. see when we will start the marathon.. might never come too.. hahaha..

  10. mamarazzi must be busy baking like a crazy woman last week huh?? since she is "distributing" her cookies to many friends around.. and thank you mamarazzi, i've got her pineapple tarts, walnut cookies (both plain and chocolate flavored), bread and also "ngar goo" chips.. thank you thank you!!! :)

  11. and know what?? i've already finished walloping the tarts, cookies and bread into my stomach over the long weekend!! muahahahaha, that was only one reason - because they tasted so nice lah.. errr, i didn't taste or smell anything alkaline at all, the cookies were crunchy and just the right sweetness for me.. sekaligus i put the cookies one by one into my mouth, and pop-pop-pop, now you see it now you don't!!! :p

  12. i heard somewhere before that the "hup tou sou" nowadays don't contain any walnut in it anymore, expensive mah, so many will just put maybe peanuts to replace the walnut.. don't know true or not?? or probably most of them just use flavoring instead of real walnut powder/pieces.. but of course i can bite the walnut pieces in mamarazzi's homemade ones, nice lah.. "hup tou sou" also one of my favorite cookies dei..

  14. kangkung price has reduced?? errr, i saw somewhere on FB today that kangkung price has increased again.. wah, increased reduced increased, such a roller-coaster pricing like commodities huh?? no wonder our dear PM need to use kangkung as an example to explain his theory on the economics of the country.. wow, little leafy veggie but large contributions..

  18. I've never use alkaline water before, in fact don't know where to buy. Oil is ok and as long as no smell, its fine for cookies. The recipe is new to me and love the cookies. Enough of baking for this month yet I am keeping the recipe aside.

  19. Thanks for trying out ya. after thinking, Frankly I suggest not to add walnut, sometime the walnut skin tasted like how you hubby said " chemical " taste. Try out one batch without walnut and see..By the way, I simply use "Red Eagle" cooking oil which flavoured with peanut oil.

  20. Oh ya, don't omit the fine salt (maybe you can add 1/4tsp), this is an important ingredient as you will taste a hint of saltiness, then only taste nice mar..The 20g salted butter will not taste salty..
